I'm diabetic and had despaired on ever finding a starch substitute that I could eat without my blood sugar readings spiking. This is it! I now cook it and serve not only with traditional pasta sauces but also Thai Curry and Indian dishes that really need a starch.

I actually prefer Dreamfields pasta to "normal" pasta now. I can't recommend this highly enough.
